I have always had a passion for cooking and baking.  I was ready to cook anytime, anywhere and wanted to share my food with everyone.  Then back in 2010, I was diagnosed with Celiac disease and my life changed.  Cooking and baking became a chore and it wasn't fun anymore.  Like most people who are diagnosed it feels like a life sentence of never being able to eat anything good ever again. I don't know about you but I love to eat and I craved all the things I couldn't eat and I was at a loss.  I was wondering if I could ever survive on such a restrictive diet.  How do people live like this?  

 

I learned where there is a will there is a way and I did lots and lots and lots of experimenting.  I think I tried every gluten free product on the market and wasn't happy with the majority of them.  They were heavy, hard as bricks, dry, crumbly, and tasteless.  I'm sure you get the picture.

 

After meeting with a local specialty foods distributor, he convinced me that the general public was crying out for good gluten free food.  He sampled my carrot cake and thought it was better than the real thing. Next thing I know I started baking cakes for him.  We started out with just a few flavors and within a month we were adding more flavors and accommodating more allergies. What started out as gluten free cakes has grown into other gluten free lines like breads, cookies, pie, candies, specialty cake mixes and of course flour.  Flour is the secret to everything and I developed and make my own flour blend.  My flour blend makes baked goods light and airy and it locks in the flavor and keeps everything moist...no crumbly, dry nasty baked goods here.  

 

It became my mission to create delicious gluten free foods and baked goods to those suffering with celiac disease or for those who are just looking to live a healthier lifestyle.  With encouragement from my friends and family I continue to develop new recipes trying to accommodate as many allergies as possible.  No one should ever feel they are doomed to a life sentence of eating tasteless food again.  It is my goal and passion to strive to provide the best tasting food regardless of one's diet, or allergies.
